Select Dinners is our one-night, chef-curated format for guests who want restaurant-level cuisine without leaving the chalet. Start with your preferred direction—Premium Wagyu & Hokkaido seafood for a luxurious progression, Chef’s Choice Kaiseki for seasonal elegance, Sushi for an intimate counter-style evening, or Izakaya-style for a lively, shareable feast.
We personalize plates for each guest (Vegetarian/Vegan, gluten-free, kids, allergy-aware, spice/salt/portion control) and handle everything end-to-end: shopping, prep, cooking, service, and clean-up. Expect thoughtful pacing, hot-and-on-time dishes, and discreet hospitality from our all-Japanese team. Perfect for birthdays, reunions, or a once-in-a-season celebration in Niseko.

Premium Wagyu&Seafood
Our signature, chef-curated progression featuring A5 Wagyu from across Japan and seasonal Hokkaido seafood (uni, crab, scallops when in season). Temperatures and textures rise course by course, finishing with a polished dessert. Ideal for birthdays and milestone nights. Vegetarian/vegan or kids plates can be designed alongside the main flow.
Chef’s Choice Japanese
(Kaiseki)
A seasonal kaiseki journey—clear broths, precise sashimi, charcoal-kissed grill, comforting rice course, and a delicate sweet. Pacing is calm and conversational, highlighting Hokkaido vegetables, Rankoshi rice, and classic dashi work. Gluten-free and allergy-aware versions available with advance notice.


Hokkaido Quintet (5 Dishes)
A relaxed five-course tasting that spotlights Hokkaido’s essentials—clean broths, bright seafood, winter vegetables, and a comforting rice or noodle finish—paired with a light dessert. It’s the easiest way to experience our private dining Niseko service on a weeknight or first visit. Vegetarian/Vegan versions are available, and kids portions can be arranged. Optional upgrades include A5 Wagyu or premium uni/crab when in season.
